Fruity and spicy chicory salad

Ingredients for 3 servings:

  • 400 g chicory
  • 1 shallot(s)
  • 1 large apple, sweet and sour
  • 3 mandarins, alternatively 2 small oranges
  • 1 handful of grapes, blue
  • 1 lemon(s)
  • 1 tsp, leveled curry
  • n. B. Honey
  • 1 cup of natural yogurt, small
  • pepper
  • Salt
  • possibly nuts, chopped

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Total time approx. 35 minutes

with apple, mandarin/orange and grape in curry-yogurt dressing

Clean the chicory stalks (remove outer/wilted leaves if necessary), halve lengthwise, trim the stem, and slice the stalks. Peel and finely chop the shallot. Quarter, core, and peel the apple. Cut the peeled apple quarters into small pieces/slices. Peel the mandarins/oranges, filleting them if necessary and separating larger segments. Wash the grapes and halve any larger berries. Mix everything carefully. For the dressing, mix the lemon juice with the curry and honey, stir in the yogurt, and season with salt and pepper to taste. Pour the dressing over the salad, mix gently again, and let it sit for a quarter of an hour. If desired, add some chopped nuts.
