Flavorful tomatoes with garlic and onions
I tried this dish today and found it simply delicious! Simply spread one or two layers of aluminum foil on a baking sheet and fold up the sides about 4 cm to prevent any liquid from escaping later. Halve the large onion and then thinly slice each half. Halve or quarter the tomatoes, depending on their size. Peel the garlic cloves and thinly slice them. Pour olive oil onto the aluminum foil. Place the onions, then the tomatoes, and then the garlic on the foil, then crumble the feta cheese over the top. Season with salt, pepper, and (very important!) sprinkle with sugar. The sugar makes the onions and garlic very mild. Place it in the oven. I have a gas stove, so it took about 30 minutes on heat setting 6-7 until the tomatoes reached the “right” consistency. On an electric stove (I could be wrong), that’s 180 degrees Celsius top/bottom heat and takes 45 minutes. I then simply lifted everything into a bowl and forked it out of the foil. But I can also imagine it being great on white bread or with potatoes and meat or fish.
