Rice salad – ideal for using leftovers and super quick to prepare

Ingredients for 1 servings:

  • 1 handful of rice, cooked
  • 1 tomato(s)
  • 1 bell pepper(s)
  • some Miracle Whip
  • some soy sauce
  • possibly salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash and quarter the tomato, wash and chop the bell pepper. Mix the tomato and bell pepper with the cooked rice. Add Miracle Whip or other sauces and soy sauce and mix everything together. Season, salt, and pepper to taste. You can, of course, add any ingredients you like. For example, corn, peas, beans… Add bread, rolls, bread rolls, baguette… whatever you want to use up. (I recently had way too much leftover rice that no one wanted, and in the end, we fought over the rice salad.)
