Ingredients for 2 servings:
- 2 m.-sized eggs
- 2 tbsp sugar
- 1 pinch of baking powder
- 4 tbsp flour
- 100 ml milk
- 2 cl plum brandy
- 150 g plums
- 2 tbsp cane sugar
- 1 tbsp sunflower oil
Instructions
Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes
Beat the eggs until frothy. Add 2 tablespoons of sugar. Sift the baking powder with the flour and add to the pan. Mix with the milk and plum brandy to form a creamy batter. Let the batter rest for 1/2 hour. In the meantime, wash, pit, and slice the plums. Add some of the plums to the batter. Heat a pan with 1/2 tablespoon of oil and add half of the batter. Spread half of the plum slices over the batter. Cook the pancake until golden brown on both sides, sprinkle the pancake with a tablespoon of brown cane sugar, and melt the sugar using the gourmet torch. Make the second pancake in the same way. Plate up and serve.
