Savory waffles with potatoes and zucchini

Ingredients for 3 servings:

  • 400 g potatoes
  • 300 g zucchini
  • 1 onion(s)
  • 1 tsp salt, approx.
  • 1 tsp Ras el Hanout, approx.
  • 2 large eggs, 150 g
  • 100 g flour, approx.
  • some oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel and weigh the potatoes, then grate them along with the onions. Grate the zucchini into fine strips. Add 2-3 eggs (approx. 150 g total weight), flour, and seasonings to the vegetables and mix well. Let the batter stand for a few minutes. Bake the batter in batches in a hot, lightly oiled waffle iron. The time this takes depends on the waffle iron and the size of the waffles. The total baking time is approximately 20 minutes. Serve with sour cream or quark and a salad.
