Whole wheat spaghetti with peppers, tomatoes and feta

Ingredients for 2 servings:

  • 250 g spaghetti (whole grain spaghetti)
  • 200 g cherry tomatoes
  • 1 bell pepper(s), red or yellow
  • Feta cheese to taste
  • 1 large onion(s)
  • 2 tsp vegetable broth, granulated
  • 2 tbsp rapeseed oil
  • salt and pepper
  • basil
  • 2 garlic cloves

Glycemic index, healthy and quick to prepare

Cook the whole-wheat spaghetti al dente. Heat the oil in a deep pan and fry the finely diced onion until translucent. Halve the tomatoes, cut the bell pepper into 3-4 cm strips, and add both to the onions. Finely dice the garlic and add it to the pan. Fry everything for 3-4 minutes, stirring. Dissolve the vegetable stock in 100 ml of hot water and add the stock to the pan. Add the pasta and feta, season to taste, and add basil, salt, and pepper. Mix everything well and serve immediately.
