Barley salad

Ingredients for 2 servings:

  • 100 g barley, pre-cooked (ready-made product)
  • ½ can beans, black, washed
  • ½ cucumber(s)
  • 4 m.-sized tomatoes
  • 1 bunch of parsley
  • ½ lemon(s)
  • 1 tbsp olive oil
  • 1 tsp, levelled salt and pepper, mixed
  • 1 tbsp balsamic vinegar

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 17 minutes

First, cook the barley in a pot of lightly salted water for about 12 minutes until al dente. Add enough water to not only cover the barley but also to raise the pot by about 1 cm. Meanwhile, finely chop the cucumber and tomatoes. Rinse the beans in a sieve and combine the oil, lemon juice, salt, pepper, and balsamic vinegar to make a dressing. Combine all ingredients and add the chopped parsley at the end.
