Ingredients for 4 servings:

  • 2 small zucchini
  • 1 m.-large eggplant(s)
  • 1 bell pepper(s) (color of your choice)
  • 150 g cocktail tomatoes
  • 1 tbsp olive oil
  • 300 g sheep’s cheese (feta)
  • some herbs, to taste
  • possibly powdered sugar (for children)

ideal for children and food combining, simple, tasty and quick to prepare

Wash the zucchini, eggplant, tomatoes, and bell peppers and chop them into small cubes or strips, depending on your preference. Then toss the vegetables with a tablespoon of oil and herbs to taste. Place the feta cheese in the center of a baking dish and arrange the vegetables around it. Bake in the oven at 220°C for about 15 minutes. Pasta, potatoes, rice, and bread go well as a side dish. For children, dust the feta cheese lightly with powdered sugar before baking.
