Ingredients for 7 servings:

  • 1 head of cauliflower
  • 1 head of broccoli
  • 1 small celery root
  • 1 zucchini
  • 4 tomatoes
  • 1 onion(s)
  • 2 tbsp olive oil
  • 1 liter vegetable broth
  • 1 pack of mixed herbs (frozen)
  • salt and pepper
  • 2 carrots
  • 2 small potatoes
  • 1 stalk(s) leek
  • Paprika powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Chop the cauliflower and broccoli into florets. Wash, peel, and dice the remaining vegetables. Finely chop the onions. Heat olive oil in a high saucepan, sauté the onions, add the vegetables, and pour in the vegetable stock. Cover and simmer the soup for 30 minutes. Quarter the tomatoes and, after about 20 minutes, add them to the soup along with the broccoli, cauliflower, and herb mixture. Season to taste.
