Smokey's salsify with orange and pistachio sauce

Ingredients for 2 servings:

  • 500 g salsify
  • 1 orange(s)
  • 1 onion(s), red, finely chopped
  • 1 handful of basil, roughly chopped
  • 1 small red chili pepper(s), finely chopped
  • 50 g pistachios, coarsely chopped
  • 2 tbsp balsamic vinegar, white
  • 3 tbsp orange juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp green peppercorns, dried, coarsely crushed
  • n. B. Salt
  • Water
  • Vinegar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Fruity version

Thoroughly brush the salsify under running water, then peel it, cut it into approximately 10-12 cm long pieces, and cook it in vinegar-soaked water for approximately 15 minutes until al dente. Drain and let it drain well. Meanwhile, peel and dice the orange. Mix the balsamic vinegar, orange juice, honey, oil, chili, pepper, and salt together with the diced orange. Add the diced onion to the salsa. Fold in the pistachios and basil. Mix everything well again. Arrange the salsify on two plates and pour the salsa over the still-warm salsify.
