Yellow wax bean salad

Ingredients for 4 servings:

  • 800 g wax beans, fresh
  • 1 sprig(s) savory
  • 3 tbsp herb vinegar
  • 1 tbsp sugar
  • e.g. salt and pepper
  • 3 tbsp mayonnaise 80% or crème fraîche
  • 5 tbsp sunflower oil
  • 2 shallots or red onions
  • 12 cocktail tomatoes, red and yellow
  • 4 tbsp parsley, flat, chopped
  • 3 tbsp chives

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Wash and trim the beans (remove any strings). Cook in boiling water with salt and savory for about 10-12 minutes until al dente, then refresh in cold water. Once cooled, cut the beans into bite-sized pieces. Make a salad dressing from vinegar, sugar, salt, pepper, and mayonnaise and mix well. Then add the oil and mix. Peel the shallots and finely dice them. Add to the salad dressing along with the finely chopped parsley and chives. Now fold in the yellow beans and the quartered tomatoes and season to taste. Let the bean salad sit for two hours and season again. Tip: If you don’t have fresh yellow beans, you can also use canned ones.
