Ingredients for 1 servings:

  • 80 g wheat flour
  • 20 g flour (whole wheat flour)
  • 1 tsp olive oil
  • 1 egg(s)
  • 1 tsp salt
  • 1 ½ tsp water, maybe more or less
  • e.g. herbs (parsley, dill, thyme, basil)
  • Water (salt water)

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Combine both types of flour in a bowl and make a well in the center. Add the oil, beaten egg, salt, and water. Stir in the flour until a dough forms. Knead the dough well until smooth and no longer sticky. Wrap the dough in cling film and let it rest for about 20 to 30 minutes. Divide the dough in half and run both halves through the pasta machine until you have two long sheets. Spread the herbs on one half of the dough and place the second half on top. Run the doubled strip of dough through the pasta machine again. Cut the dough sheet into squares (approx. 2 x 2 cm) and place them on a baking sheet. Let the pasta squares dry at 150°C for about 30 minutes. After drying, cook the pasta in boiling salted water for about 5 minutes until al dente, then toss in oil, margarine, or herb butter. It can also be served as a garnish in a clear broth.
