Couscous salad with lots of vegetables

Ingredients for 1 servings:

  • 50 g couscous
  • 75 ml vegetable stock
  • 1 cucumber(s)
  • 2 carrots
  • 1 zucchini
  • 6 mushrooms
  • 30 g sheep’s cheese, possibly light
  • oil
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Let the couscous simmer in the vegetable broth. Sauté the grated carrots and zucchini in a few drops of oil (oil spray). Add the mushrooms a little later and season to taste. In the meantime, finely dice the cucumber and add a little salt. Mix everything together and sprinkle the feta cheese on top. It’s made with 6-pack feta cheese. It’s suitable for all other vegetables; the important thing is to season it well.
