Ingredients for 1 servings:
- 400 g onion(s), diced
- 1 tsp, leveled caraway seeds
- 2 tbsp flour
- Oil for frying
- 600 g flour
- 400 ml buttermilk
- 200 g bacon, diced, lean
- 200 g blue cheese
- 2 ml egg(s)
- 150 olive oil
- 1 packet of baking powder
- 4 stalk(s) spring onion(s), cut into rolls
- 2 tbsp chives (rolls)
- 2 tbsp parsley, chopped
- Thyme
- e.g. salt and pepper
- nutmeg
Instructions

it is the small version of onion cake
Peel the onion, dice it, and then coat it in flour. Add the caraway seeds and mix. Fry the mixture in hot oil until golden brown and pat dry on kitchen paper to absorb the fat. Sift the flour (600g) with the baking powder into a bowl. Mix the rendered bacon with the lightly fried spring onions, chives, parsley, and some of the shredded thyme. Then add the olive oil, eggs, and buttermilk, seasoned with salt, pepper, and nutmeg. Finally, fold in the fried onions. Line the muffin tins with paper baking cups and fill with the mixture. The oven should be preheated; now place the muffins in the oven and bake at 175°C for about 25-30 minutes. 10 minutes before the end of baking, place a slice of blue cheese on each muffin and bake with it. Once they’re finished baking, remove the muffins from the tin and arrange them on a large plate or glass platter.
