Ingredients for 2 servings:

  • 200 g bread(s), dumpling bread (bread cubes)
  • ⅛ liter milk
  • 1 onion(s)
  • Herbs, for salad, fresh (like parsley)
  • 10 g flour
  • 4 eggs
  • salt and pepper
  • oil
  • butter
  • 2 eggs

Dice the onion and fry in plenty of oil. Place the dumpling bread in a bowl and pour over 1/8 liter of hot milk. Add the eggs and the fried onions. Season with parsley (or alternatively, a herb mix), salt, and pepper. Add 10g of flour. Knead everything well until a dough forms. Let it rest for a while. Meanwhile, bring a large pot of water to a boil. With moistened hands, form round dumplings and place them in the boiling water. As soon as the dumplings float to the surface, remove them from the water bath and let them drain. Alternatively, the dumplings can also be prepared in cups in the microwave – unbelievable – it works excellently. 4 minutes at 600 watts. Fry the finished dumplings in butter. When they are golden brown, crack two eggs over them. Fry. Serve with a green salad and pumpkin seed oil dressing.
