Peach and tomato chutney

Ingredients for 1 servings:

  • 500 g peach(s), peeled and cut into small pieces
  • 250 g diced tomatoes
  • 1 chili pepper(s), red, without seeds
  • 250 g onion(s), finely diced
  • 3 garlic cloves
  • 3 sprigs of fresh thyme, to taste
  • 3 fresh mint leaves
  • 1 tbsp mustard seeds
  • 1 pinch of cumin
  • Salt, to taste
  • Olive oil, for frying
  • 100 g sugar
  • 100 ml apple cider vinegar

Peel the peaches and cut into small pieces. Dice the tomatoes and onions. Deseed the chili and thinly slice. Finely chop the garlic. Sauté the onions, garlic, and chili in a little olive oil with the sugar until golden brown. Then deglaze with the apple cider vinegar and add the tomatoes, peaches, herbs, and mustard seeds. Simmer gently until the desired consistency is reached. This takes about 15 minutes. Season to taste and immediately pour into prepared jars and seal tightly. The chutney is particularly delicious with cheese, white meat, or fish.
