Ingredients for 1 servings:

  • 250 g beef (roulade meat), up to 300 g
  • 1 tsp, heaped salt
  • 6 peppercorns
  • 1 tsp thyme, dried
  • 1 tsp oregano, dried
  • 80 ml Worcestershire sauce
  • 80 ml soy sauce, preferably mildly spicy
  • 2 small onions or 1 large onion
  • 2 garlic cloves, or 3
  • 250 g beef (roulade meat), up to 300 g
  • 5 tbsp BBQ sauce, to taste

Meat snack low carb + low fat

Beef jerky can be prepared in many different ways – two of them are shown here. This delicious meat snack is not a new invention – it was a regular staple among Native Americans, such as the Dakota Indians, as “pemmican.” Makes approximately 200g. Peel the onion and cut it into large pieces, and cut the meat into approximately 2cm wide strips. For version 1, place the meat in a bowl and sprinkle with salt, thyme, and oregano. Add the peppercorns, peeled garlic cloves, and chopped onion. Pour equal parts of Worcestershire sauce and soy sauce over the meat, ensuring it is lightly coated. Briefly mix everything together and then refrigerate for 1 to 2 hours to marinate. For version 2, place the meat in a bowl. Spread about 5 tablespoons of the BBQ sauce on top, mix everything together, and then refrigerate for 1 to 2 hours. Then spread the marinated meat strips on a wire rack or hang it over the individual bars of the rack. Then put the rack in the oven. Place a baking tray underneath to catch any dripping marinade. To further enhance the meat’s flavor, scatter the onion pieces and garlic cloves on the baking tray. The meat is then dried at 70 degrees Celsius for at least 7 hours.
