Spicy zucchini carpaccio with radishes and soy sauce

Ingredients for 4 servings:

  • 1 small zucchini
  • 1 bunch of radishes
  • 5 tbsp soy sauce
  • 1 bunch of chives
  • 3 tbsp Italian hard cheese, sliced
  • 1 pinch(s) of pepper
  • 1 pinch of salt

Working time approx. 20 minutes; Total time approx. 20 minutes

Asian, spicy, piquant

Using a mandoline slicer on a low setting (I use setting 2 on my TNS slicer), slice the zucchini into very thin slices. Arrange the zucchini slices on a platter. Season with pepper and a very small amount of salt to taste. Finely grate the radishes using a vegetable grater. Stir the soy sauce into the radishes, and the spicy Asian dressing is ready. First, spread the radish dressing over the zucchini slices, then finely chop the chives and sprinkle them on top. Finally, sprinkle with shaved Parmesan or Grana Padano.
