Vegetarian pasta bake

Ingredients for 4 servings:

  • 500 g pasta
  • 1 zucchini, depending on size
  • 4 tomatoes
  • 1 onion(s)
  • 2 cloves garlic
  • olive oil
  • 300 g sour cream
  • 200 g cream
  • 1 jar feta cheese, diced, in oil
  • 1 pack of sheep’s cheese, e.g. “Mediterranean Herbs Gourmet Cubes”
  • 2 tsp vegetable broth, instant
  • Basil, fresh
  • pepper
  • oregano

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

with zucchini, tomatoes and feta cheese

First, roughly dice the zucchini and tomatoes, then finely dice the onions and garlic. Add the pasta and cook until al dente. Heat a pan and first glaze the onions and garlic in a little oil. Add the zucchini, then after about 5 minutes, the tomato cubes. Heat for another 3 minutes. Now add the jar of feta cheese cubes and all the oil, then the gourmet cubes, followed by the sour cream and cream. Season to taste with 2 teaspoons of vegetable stock and the spices. If it’s not creamy enough, simply reduce it a little longer. Drain the cooked pasta and place it in a baking dish. Pour the creamy vegetable sauce over it. Bake in the oven at 180°C (top/bottom heat) for about 20 minutes.
