Cheese crackers with Grana Padano

Ingredients for 4 servings:

  • 120 g flour
  • 60 g butter, room temperature
  • 70 g Grana Padano
  • 60 g sour cream
  • some salt and pepper
  • 1 egg(s)
  • 1 sprig(s) rosemary

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 5 minutes

Sift flour into a bowl. Add butter, sour cream, and grated Grana Padano. Knead the ingredients into a dough. Season with a little salt and pepper (not too much—the Grana Padano already gives the dough a wonderful flavor). Shape the dough into a log (approx. 4 cm in diameter) and wrap it in cling film. Place it in the refrigerator for 30 minutes. (If you’re in a hurry, you can also briefly freeze it.) Cut the log into 0.5 cm thick slices and place them on a baking sheet lined with parchment paper. Separate the egg whites and yolks and brush the egg whites over the crackers. Sprinkle with rosemary sprigs and grate a few more Grana Padano flakes over the top. Bake in a preheated oven at 180°C (convection oven) until golden brown.
