Styrian Klachl soup

Ingredients for 4 servings:

  • 1 kg pig tails and feet (no shanks)
  • 1 bunch of soup vegetables
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 tbsp thyme
  • 1 tbsp marjoram
  • 1 tsp peppercorns
  • 5 bay leaves, fresh
  • 1 shot of vinegar
  • 3 tbsp flour
  • 6 tbsp sour cream
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Slow Food

Combine all ingredients in a pot with enough water to cover. Simmer over low heat for about an hour, until the meat is tender. Strain the soup, set the meat aside, and let it cool. Remove the cold meat from the bones. In the meantime, mix the sour cream with the flour and stir into the boiling broth. Return the meat to the soup and season to taste. Bread dumplings make a particularly good side dish. This soup is especially good on cold days.
