La recette parfaite du pain complet à l'épeautre avec une image et des instructions simples étape par étape.
Levure
- 200 g Wholemeal spelled flour
- 150 g d'eau tiède
- 60 g Approche au levain
- 2 cuillère à soupe de sirop de betterave
Pâte principale
- 400 g Farine de blé entier
- 300 g Wholemeal spelled flour
- 250 g Farine d'épeautre type 630
- 300 g Bière de blé (non filtrée, non pasteurisée)
- 100 g d'eau
- 25g Sel
- 2 cuillère à soupe de sirop de betterave
Mélange de céréales
- 100 g de graines de lin
- 50 g Sésame
- 100g Graines de courge
Matériel
- Moule à pain 35 cm Résistant au levain
- Beurre pour le moule
Levure
- Incorporer le mélange de levain dans l'eau. Ajouter le sirop de betterave à sucre. Incorporer la farine. Couvrir et laisser fermenter à température ambiante. La quantité de pâte doit avoir doublé. Vous pouvez donner au levain 24 à 36 heures pour cela.
- Faire tremper le mélange de céréales dans l'eau pendant au moins 6 heures, mais aussi toute la nuit.
