Fruity Apple and Red Cabbage

Ingredients
 

  • 1 Red cabbage (blue cabbage) fresh
  • 2 piece Chopped onions
  • 1 piece Garlic clove finely diced
  • 5 piece Apples
  • 1 piece Orange, juice
  • 2 tablespoon Brown sugar
  • 3 piece Bay leaves
  • 1 piece Clove
  • 4 piece Allspice grains
  • 1 pinch Nutmeg
  • 50 ml Apple Cider Vinegar
  • 50 ml Bianco balsamic vinegar
  • 1 Tablespoon (heaped) Red currant jelly
  • Salt and pepper
  • 1 heaped teaspoon. Lard
  • 1 tablespoon Margarine

Instructions
 

  • Remove the outer leaves of the red cabbage, quarter them, remove the stalk, cut into fine slices and place in water.
  • Dice the onions and garlic. Squeeze the orange and measure out the vinegar.
  • Put the bay leaves, lard and margarine in a large, tall saucepan, briefly sauté the onions and garlic until translucent, add the brown sugar, stir and add the dripping wet red cabbage and sweat briefly. Season with salt, pepper and nutmeg, add the clove and allspice grains (I put it in a herb roll, you can also use a tea filter bag, or put it in like that). Add the orange juice, currant jelly and vinegar, stir, put the lid on and let simmer for about 30 minutes.
  • Peel, quarter and core apples and cut into thin slices or dice.
  • After 30 minutes add the apple slices and stir. Let simmer for another 25 minutes. Season again if necessary. If you prefer it softer and not so firm to the bite, let it steam a little longer until it has the desired consistency.
  • Since it is too much for a meal, I filled two containers with the red cabbage and frozen them. So you always have something to hand when you need it. 🙂
