Goose Sauce

The perfect goose sauce recipe with a picture and simple step-by-step instructions.

  • 1 Pc. Goose neck
  • 2 Pc. Goose wings
  • 1 Pc. Apple
  • 1 Pc. Onion
  • 1 tbsp Tomato paste
  • Salt
  • Olive oil
  • 100 ml White wine
  • 500 ml Poultry stock from the jar
  1. Sear the goose necks and wings in the olive oil, stirring constantly. Add apple and onion, fry again, season with salt, stir in tomato paste, deglaze with wine and reduce. Add the poultry stock and reduce on a medium setting for approx. 45 minutes. Frying fat or whatever we had to admit.
