  • Whisk all ingredients. Heat the butter and oil in a frying pan and pour the egg mixture into the pan. Distribute evenly by swiveling.
  • Fry over medium to high heat for about 2 minutes, until the underside is firm and the surface is lightly bushed. Fold into a half moon and serve.
  • The herbs can be varied as desired. You can also stir diced ham, pesto or chilli flakes into the egg mixture. But then leave out the cheese.
