How Can I Keep Peeled Potatoes Fresh for a Day?

To avoid loss of vitamins and minerals, raw, peeled potatoes should be prepared quickly and not stored in water beforehand.

However, it is perfectly possible to store raw, peeled potatoes for a certain period of time. This is mainly practiced in canteen kitchens when large quantities of potatoes have to be prepared and stored. The potatoes are placed in cold water with a small dash of vinegar or lemon juice. The peeled potatoes can be kept for 1 day without any major loss of quality. Before cooking, discard the water and boil the potatoes in fresh water. If the potatoes are used for frying, they must be dried well beforehand. In addition to the loss of vitamins and minerals, the vinegar/lemon juice can give the potatoes a slightly sour taste.

Raw potatoes should not be stored in the freezer. Once thawed, they would be soft and spongy and taste very sweet.

Cooked potatoes will keep, covered, in the refrigerator for at least 2 days.

Always check the potatoes with your own senses before eating them. If the potatoes have become very soft or rubbery, or if their taste and appearance have changed, they should no longer be eaten.
