Ingredients
 

  • 1 piece Beef steak 300 grams
  • Black pepper from the mill
  • Sea salt from the mill
  • 2 tablespoon Sunflower oil

  • Take the meat out of the refrigerator for about 30 minutes before preparation and rinse it under running water. Pat the meat dry with a paper towel. Rub it with the black pepper. Do not salt! Prepare a large piece of aluminum foil (half the size of a baking sheet). Preheat the oven to 100 degrees. Make sure to use a pouring pan to fry the meat.

The roast

  • The rule of thumb here is: fry for about 1 minute per cm of meat thickness. Put the ladle on high heat. Use about 2 tablespoons of sunflower oil for frying. The oil is hot enough when you lift a toothpick into the hot oil to test it. If this bubble throws you can sear the meat. After about 2 minutes, turn the meat with a spatula (no fork), turn the stove back by half and fry again for 2 minutes. Take the meat out of the pan and wrap it in the aluminum foil, then salt and seal the meat and let it settle in the preheated oven for about 15 minutes.
