Pollo Fino Gyrosart & Cottage Cheese Tzaziki

The perfect pollo fino gyrosart & cottage cheese tzaziki recipe with a picture and simple step-by-step instructions.

Pollo Fino “Gyrosart”:

  • 400 g Boneless Chicken Legs
  • 1 tsp Extra virgin olive oil
  • 1 tsp Paprika powder
  • 1 pinch Freshly ground coriander
  • 1 pinch Ground cumin
  • 0,5 tsp Each of marjoram, thyme, oregano, rosemary
  • 0,5 tsp Seasoned salt from my KB
  • 0,5 tsp Garlic pepper from my KB
  • 0,5 tsp Telly cherry pepper

Cottage cheese tzaziki:

  • 200 g Cottage cheese
  • 150 g Yogurt
  • 1 small Land cucumber
  • 1 Clove of garlic
  • 1 pinch Salt
  • 1 pinch Seasoned salt from my KB
  • 1 tbsp Extra virgin olive oil

Cauliflower broccoli chickpea pan:

  • 300 g Cauliflower fresh
  • 300 g Broccolini
  • 2 Shallots
  • 3 small Tomatoes
  • 150 g Chickpeas
  • 150 g Seasoned salt from my KB
  • 150 g Garlic pepper from my KB
  • 150 g Telly cherry pepper
  • 150 g Paprika powder

Pollo Fino: Preheat the oven to 180 degrees / convection

  1. Mix the above spices, herbs and oil and use them to marinate the chicken drumsticks! Put the chicken pieces in a baking dish and bake in the oven for about 35 minutes until crispy! Longer or shorter depending on the desired crispness!

Cauliflower broccoli chickpea pan:

  1. Clean the cauliflower and broccoli and cut into florets, rinse with cold water. Strain the chickpeas and rinse them with cold water. Peel the shallots and cut into fine wedges. Wash tomatoes, quarter them, remove the stalk and dice finely. Heat olive oil in a pan and slowly fry the cauliflower, broccoli and shallots!

Cottage cheese tzaziki:

  1. In the meantime, wash the cucumber, if necessary peel it lightly. Halve lengthways and remove the core! Grate finely on a grater. Put in a sieve and add a little salt! Let it steep briefly. Peel and finely grate the garlic. Then squeeze out a little cucumber and mix with cottage cheese, yoghurt, garlic, oil, seasoned salt, garip pepper and let it steep!

Cauliflower broccoli chickpea pan:

  1. Now add the chickpeas and tomatoes. Mix well and season with seasoned salt, garip pepper, pepper and paprika powder!

Pollo Fino:

  1. Cut the chicken into strips and serve with the cauliflower, broccoli and chickpea pan and tzaziki!
