Rhubarb cake without sugar – the ingredients for the recipe
Sugar can be easily replaced in baking.
- For the dough, you need 500 grams of wholemeal flour and a packet of baking powder as a leavening agent.
- You will also need 250 grams of butter, six eggs, a pinch of salt, and some lemon zest.
- 250 grams of honey provide the sweetness.
- Rhubarb should not be missing from rhubarb cake. You will need 750 grams of vegetables.
- You also need 150 grams of flaked almonds.
How to bake the cake
Once you have all the ingredients, preheat the oven to 200 degrees.
- First, peel and trim the rhubarb and cut the stalks into small pieces about 5 cm long.
- Mix the flour and baking powder and add the zest of the lemon.
- Mix the melted butter with the honey to form a homogeneous mass. Then stir in the flour and egg yolks.
- Make egg whites from the egg whites and a pinch of salt and fold them into the batter.
- Now fill the dough on a greased, high baking tray and distribute the rhubarb pieces on it. Press the rhubarb into the batter a little.
- Finally, sprinkle the sliced almonds over it and put the cake in the oven.
- After about 25 minutes of baking time, the rhubarb cake is ready without sugar. You can use the stick test to check whether the dough is ready.
