Instructions
Pre-dough
Knead the ingredients for the pre-dough and let rise for 1 hour at room temperature. Then put in the refrigerator for 48 hours.
Source piece
Mix the rye meal and water and let soak for 5-10 hours.
Main dough
Knead the pre-dough, the swelling and the ingredients for the main dough. (about 2 minutes slowly / 8 minutes fast) Cover and let rise for 1.5 hours.
Form two loaves, brush with mustard and roll in sunflower seeds. Let it rise again - about 1 hour
Heat the oven to 220 degrees. Bake bread with steam for about 40-45 minutes.
