Ingredients
 

PREPARED

  • 60 g Wheat flour type 550
  • 40 g Water
  • 2 g Yeast
  • 2 g Salt

SOURCE PIECE

  • 200 g Rye meal
  • 200 g Water

MAIN DOUGH

  • 600 g Wheat flour type 550
  • 300 g Water
  • 14 g Yeast
  • 16 g Salt
  • 40 g Mustard
  • 120 g Grated cheese, such as cheddar ..

Instructions
 

Pre-dough

  • Knead the ingredients for the pre-dough and let rise for 1 hour at room temperature. Then put in the refrigerator for 48 hours.

Source piece

  • Mix the rye meal and water and let soak for 5-10 hours.

Main dough

  • Knead the pre-dough, the swelling and the ingredients for the main dough. (about 2 minutes slowly / 8 minutes fast) Cover and let rise for 1.5 hours.
  • Form two loaves, brush with mustard and roll in sunflower seeds. Let it rise again - about 1 hour
  • Heat the oven to 220 degrees. Bake bread with steam for about 40-45 minutes.
