Chocolate Cakes with Liquid Core on Fruit Mirror and Ice Cream

Ingredients

Fruit mirror

  • Orange juice
  • 6 tsp Starch
  • 6 tsp Orange liqueur
  • 1 tsp Lemon juice
  • 3 tbsp Powdered sugar

Chocolate cakes

  • 100 g Chocolate 80% cocoa
  • 3 Eggs
  • 115 g Sugar
  • 45 g Flour
  • 70 g Olive oil
  • 1 tbsp Butter
  • 100 g Sugar

Instructions

Fruit mirror

  • Mix the starch with orange juice and thicken by simmering gently. Then season with orange liqueur, lemon juice and powdered sugar.

Chocolate cakes

  • Melt the chocolate in a double boiler. Mix eggs, flour, sugar and olive oil into a batter and slowly add the melted chocolate. Grease the molds with butter and sprinkle with sugar. Fill the dough halfway into the molds and bake in a preheated oven at 100 degrees for about 9 minutes. Serve the cake hot on the fruit mirror and with some ice.
