Chocolate Cakes with Liquid Core on Fruit Mirror and Ice Cream

Fruit mirror

  • Orange juice
  • 6 tsp Strength
  • 6 tsp Orange liqueur
  • 1 tsp Lemon juice
  • 3 tbsp Powdered sugar

Chocolate cakes

  • 100 g Chocolate 80% cocoa
  • 3 Eggs
  • 115 g Sugar
  • 45 g Flour
  • 70 g Olive oil
  • 1 tbsp Butter
  • 100 g Sugar

Fruit mirror

  1. Mix the starch with orange juice and thicken by simmering gently. Then season with orange liqueur, lemon juice and powdered sugar.

Chocolate cakes

  1. Melt the chocolate in a double boiler. Mix eggs, flour, sugar and olive oil into a batter and slowly add the melted chocolate. Grease the molds with butter and sprinkle with sugar. Fill the dough halfway into the molds and bake in a preheated oven at 100 degrees for about 9 minutes. Serve the cake hot on the fruit mirror and with some ice.
