Spinach - Sparrows with Turkey Pan.

Dough :
- 3 Pc. Eggs
- 250 ml Natural carbonated mineral water
Dough has to fall heavily from the spoon
- Sifted flour
- 100 g Blanched spinach
- 1 bunch Freshly chopped chives
- Coarse salt
- Black pepper from the mill
Cooking in:
- 2 liter Boiling water
- 1 tablespoon Coarse salt
Turkey pan:
- 200 g Sliced turkey
- 1,5 tablespoon Corn oil
- 1 Pc. Diced onion
- 0,5 Can Mushrooms
peeled, cut, blanched:
- 3 Poles Fresh asparagus
- Dried basil
- Dried tarragon
- 1 teaspoon Sweet paprika
- 1 pinch Coarse salt
- 1 pinch Black pepper from the mill
Scald the spinach, quench, squeeze out and cut into small pieces, make the dough. Stir the spinach into the dough.
Make a smooth dough from all the ingredients, it must have a somewhat heavy consistency. Should not be used immediately, let it rest a little first. (Fridge) Season the dough, cut off the sparrows with a tablespoon and add them to the hot water. The sparrows should now cook gently in the water.
Sparrows are good when they come up. Skim off and put in a baking dish.
Pan :
Heat the oil, add the onion and mushrooms. Sear the meat, add the asparagus, season. Swivel briefly.
toss the sparrows in the hot butter. Arrange both together. Good Appetite .
