Vegan: Asparagus Fried in (vegan) Butter with Side Dish of Potatoes and Carrots
Servings: 2 people
- 1 kilo Fresh asparagus
- 1 kilo Vegetable broth * for cooking
- 1 kilo Lemon in the cooking water
- 0,5 tsp Sugar
- 30 g Vegan butter
- 30 g ************************************
- 4 medium sized Potatoes
- 4 medium sized Carrots / Carrots
- 1 tbsp Vegetable salt *
- 1 sheet Parsley to garnish
Peel the asparagus and cook in the salted water, with the sugar, a little vegetable stock and a little lemon juice until it is cooked through, but it should still be firm to the bite.
Leave out the asparagus in a pan and fry the asparagus stalks on all sides, if necessary season with vegetable stock, depending on your taste.
