Vegan: Asparagus Fried in (vegan) Butter with Side Dish of Potatoes and Carrots

Servings: 2 people

Ingredients

  • 1 kilo Fresh asparagus
  • 1 kilo Vegetable broth * for cooking
  • 1 kilo Lemon in the cooking water
  • 0,5 tsp Sugar
  • 30 g Vegan butter
  • 30 g ************************************
  • 4 medium sized Potatoes
  • 4 medium sized Carrots / Carrots
  • 1 tbsp Vegetable salt *
  • 1 sheet Parsley to garnish

Instructions

  • Peel the asparagus and cook in the salted water, with the sugar, a little vegetable stock and a little lemon juice until it is cooked through, but it should still be firm to the bite.
  • Leave out the asparagus in a pan and fry the asparagus stalks on all sides, if necessary season with vegetable stock, depending on your taste.
