Soup: Semolina Dumplings

- 80 g Semolina
- 30 g Butter
- 1 Egg
- 1 pinch Flour
- Nutmeg
- Salt and pepper
Separate the egg, beat the softened butter with the egg yolk. Season and salt. Beat the egg whites with a pinch of salt until stiff.
Add the semolina to the butter mixture, season the flour and mix well. Now slowly fold in the beaten egg white and refrigerate the dough for an hour.
Form small oblong dumplings with your hands and let them simmer in the broth for 15 minutes.
