Hot Poor Knight

Ingredients

  • 3 Free range eggs
  • 1 Red chilli pepper
  • 1 tbsp Freshly chopped chives
  • 4 slice White bread
  • Pepper from the grinder
  • Fleur de Sel sea salt
  • Olive oil

Instructions

  • Core the chilli pepper and chop finely. (If you want it really spicy, leave the seeds in) Whisk eggs with chilli and season with salt and pepper.
  • Heat the olive oil in a pan. Turn the white bread slices in the egg-chilli mixture until they are completely soaked with egg. Then fry in the pan until golden brown.
  • Remove from the pan, sprinkle with the chopped chives, serve and enjoy.
