Italian Bread Salad with Chorizo

Ingredients

  • 2 Baguette
  • 1 shot Olive oil
  • 1 bunch Rosemary
  • 150 g Arugula
  • 250 g Cherry tomatoes
  • 200 g Chorizo ​​sausage
  • 50 g Parmesan
  • 1 Red Onion
  • 2 tbsp Balsamic vinegar
  • 1 tsp Honey
  • 1 tsp Mustard
  • 1 pinch Pepper
  • 1 pinch Salt

Instructions

  • Cut the baguettes into small cubes and fry them in a pan with olive oil and rosemary. Peel the onion and cut into small pieces like the chorizo ​​and fry lightly in a second pan.
  • Arrange the rocket and tomatoes in a bowl. Mix a marinade of olive oil, balsamic vinegar, honey, mustard and a little pepper and salt and pour over the salad. Then add the bread cubes and the chorizo ​​and stir in carefully. Slice fresh Parmesan over the salad and serve.
