Sauerkohl Stew with Vegetables and Meat

Ingredients

Vegetables:

  • 500 g Wine sauerkraut
  • 600 g Fresh white cabbage
  • 50 g Carrots
  • 50 g Celery
  • 50 g Leek
  • 50 g Red peppers
  • 1 Onion
  • 1 tbsp Finely chopped parsley

Flesh:

  • 50 g Juniper Belly Meat
  • 150 g Cabbage sausage
  • 4 Mushrooms

Spices:

  • 1 tsp Coriander
  • 1 tsp Caraway seeds
  • 2 Bay leaves
  • 6 Juniper berries

Side dishes:

  • 200 g Jacket potatoes
  • 1 tbsp Pearl barley

Liquid:

  • 2 L Vegetable broth
  • 0,2 L Sauerkraut juice

Instructions

Prepare:

  • Pre-cook the jacket potatoes. Chop the vegetables and also the meat. Layer with the side dishes and spices in a saucepan and pour in the liquid.

Stew:

  • Slowly bring the soup ingredients to the boil to make a stew. Skim off excess cooking liquid with a trowel and collect it separately in a container, which can be reused later.
