Ingredients
Vegetables:
- 500 g Wine sauerkraut
- 600 g Fresh white cabbage
- 50 g Carrots
- 50 g Celery
- 50 g Leek
- 50 g Red peppers
- 1 Onion
- 1 tbsp Finely chopped parsley
Flesh:
- 50 g Juniper Belly Meat
- 150 g Cabbage sausage
- 4 Mushrooms
Spices:
- 1 tsp Coriander
- 1 tsp Caraway seeds
- 2 Bay leaves
- 6 Juniper berries
Side dishes:
- 200 g Jacket potatoes
- 1 tbsp Pearl barley
Liquid:
- 2 L Vegetable broth
- 0,2 L Sauerkraut juice
Instructions
Prepare:
- Pre-cook the jacket potatoes. Chop the vegetables and also the meat. Layer with the side dishes and spices in a saucepan and pour in the liquid.
Stew:
- Slowly bring the soup ingredients to the boil to make a stew. Skim off excess cooking liquid with a trowel and collect it separately in a container, which can be reused later.
