Buttermilk Soup

Ingredients

  • 4 Organic egg yolks
  • 3 tbsp Sugar
  • 2 packet Vanilla sugar
  • 1 Lemon fresh
  • 1 L Buttermilk
  • 125 ml Cream
  • Possibly 4 mint leaves

Instructions

  • Squeeze the lemon. Beat the egg yolks, sugar and vanilla sugar until a thick, foamy mass is formed and the sugar has dissolved. Add the lemon juice drop by drop. Finally stir in the buttermilk.
  • Fill the "soup" into dessert bowls and chill for 1 hour. Before serving, whip the cream and spread it over the soup. If available, decorate with 4 mint leaves.
