Creamed Spinach with Fried Egg
Servings: 2 people
- 450 g Frozen spinach
- 1 Onion
- Salt and pepper from the mill
- Freshly grated nutmeg
- 2 tbsp Cream
- 4 Eggs
- 2 tsp Margarine for frying
- 4 Potatoes
Peel and quarter the potatoes and cook in salted water. Sweat the peeled and very finely diced onions in a little margarine. add the spinach and season with salt and pepper, slowly simmer until the spinach water has boiled away, now season with nutmeg and refine with cream.
Put the fried eggs in a cold pan and fry them slowly. Now serve with the potatoes. A good and quick meal for every day .................
