Creamed Spinach with Fried Egg

Servings: 2 people

Ingredients

  • 450 g Frozen spinach
  • 1 Onion
  • Salt and pepper from the mill
  • Freshly grated nutmeg
  • 2 tbsp Cream
  • 4 Eggs
  • 2 tsp Margarine for frying
  • 4 Potatoes

Instructions

  • Peel and quarter the potatoes and cook in salted water. Sweat the peeled and very finely diced onions in a little margarine. add the spinach and season with salt and pepper, slowly simmer until the spinach water has boiled away, now season with nutmeg and refine with cream.
  • Put the fried eggs in a cold pan and fry them slowly. Now serve with the potatoes. A good and quick meal for every day .................
