Finely dice the onions.
Cut the garlic into thin slices.
Finely dice tomatoes
Drain the beans over a sieve, rinse and drain well.
Heat maple syrup in a saucepan over medium heat.
Add onions, garlic, star anise and bay leaves and cook for 3 minutes while stirring.

Add beans and tomatoes and bring to the boil.
Season with mustard, Worcester sauce, salt and pepper.
Bake the beans under the hot oven grill on the middle rack for 10 minutes.
In the meantime, heat the oil in a pan, fry the bacon slices brown on each side, remove and drain on kitchen paper.
Melt the butter in the bacon fat.
Beat the eggs and fry them for about 3 minutes.
