Lentil Curry Rice with Beetroot

- 1 piece Small onion
- 4 piece Beetroot (pre-cooked)
- 12 piece Dried apricots
- 2 tbsp Sesame
- 1 tbsp Honey liquid
- 2 tbsp Olive oil
- Juice of one lemon
- Salt and pepper to taste
- 1 handful Parsley leaves
- 1 pack Uncle Ben’s Express Curry Rice with Lentils
Peel the onion and dice finely. Cut the beetroot into sticks and cut the apricots into strips. Toast the sesame seeds in a pan without oil for a minute.
Mix onion, beetroot, apricots, honey, olive oil and lemon juice and season with salt and pepper. Roughly pluck the parsley and add.
Heat Uncle Ben’s Express curry rice with lentils according to the instructions on the package and serve with the beetroot and apricot salad. Sprinkle everything with the sesame seeds.
Tip 4: A creamy yogurt goes well with this. If you like, you can refine the beetroot salad with a little cumin.
