Peel thin strips of the cucumber and radish with a vegetable peeler. Cut the radishes into slices. Peel the onion and cut into rings. Peel and finely grate the garlic.
Mix the garlic, soy sauce, 3 tablespoons of sesame oil, lime juice and honey into a dressing. Cut the tofu into fine strips. Cook the egg until waxy.
Heat the remaining oil in a non-stick pan and fry the tofu vigorously for about 5 minutes. Season with salt and pepper and turn carefully.
Mix the radish, cucumber, radishes, onions and tofu with the dressing. Heat Uncle Ben’s Express Curry Rice according to the instructions on the packet, allow to cool a little and carefully mix with the marinated vegetable salad. Top with the halved egg.
Tip 5: If you like, you can garnish everything with a little fresh coriander.
