Cold Meadowsweet in Red Vineyard

For the parfait:
- 1 Pc. Egg
- 5 Pc. Egg yolk
- 150 g Sugar
- 1 shot White wine
- 600 g Cream
- 1 bunch Meadowsweet
Vineyard peach cream:
- 300 g Low fat quark
- 1 Glass Vineyard peach jam
- 1 Glass Cooked down vineyard peaches
- 20 g Sugar
- Juice of 1/2 lemon
- 2,5 g Agar-agar
- 100 ml Apple juice
Cream:
Mix the quark, jam, sugar and lemon, bring the agar agar to the boil in apple juice and adjust the masses.
Now add 2 tablespoons of the quark mixture to the hot liquid and then stir the hot mixture into the quark. Chill for about 3 hours and pour into a piping bag. This makes serving easier.
