Cold Meadowsweet in Red Vineyard

Ingredients

For the parfait:

  • 1 Pc. Egg
  • 5 Pc. Egg yolk
  • 150 g Sugar
  • 1 shot White wine
  • 600 g Cream
  • 1 bunch Meadowsweet

Vineyard peach cream:

  • 300 g Low fat quark
  • 1 Glass Vineyard peach jam
  • 1 Glass Cooked down vineyard peaches
  • 20 g Sugar
  • Juice of 1/2 lemon
  • 2,5 g Agar-agar
  • 100 ml Apple juice

Instructions

Parfait:

  • Put the ingredients for the parfait, except for the cream and meadowsweet, in a bowl and boil it over a water bath for 10-15 minutes.

Cream:

  • Mix the quark, jam, sugar and lemon, bring the agar agar to the boil in apple juice and adjust the masses.
  • Now add 2 tablespoons of the quark mixture to the hot liquid and then stir the hot mixture into the quark. Chill for about 3 hours and pour into a piping bag. This makes serving easier.
