Cut the seitan into small strips and mix with the gyros spice and let it steep a little.
Sear the cut seitan in coconut oil and add the finely chopped leek and sear it well.
Peel, wash and boil the potatoes, add the butter, almond milk, salt and nutmeg and mash and stir well.
Serving
Put the seitan leek gyros on preheated plates and add the mashed potatoes with a serving ring ... the whole thing was really delicious ... with a cucumber and apple salad
