Sweet Potatoes with Spinach in Coconut Milk

Ingredients

  • 600 g Sweet potatoes
  • 400 g Frozen spinach leaves
  • 400 ml Coconut milk
  • 2 Clove of garlic
  • 1 Onion
  • 1 tsp Chopped ginger
  • 3 Chilli red fresh
  • 1 tbsp Rapeseed oil
  • 1 tsp Garam masala
  • 0,5 tsp Coriander powder
  • 0,5 tsp Nutmeg
  • Salt
  • 1 Lime

Instructions

  • Chop the onions, garlic and chilli and sauté with the ginger in hot oil in a saucepan. Peel and dice sweet potatoes. Add to the onions and sauté.
  • Deglaze with coconut milk and add the frozen spinach. Season with coriander, nutmeg and garam masala and let everything simmer for about 20 minutes with the lid closed.
  • Season to taste with salt and finally add the juice of the fresh lime.
