Sweet Potatoes with Spinach in Coconut Milk

- 600 g Sweet potatoes
- 400 g Frozen spinach leaves
- 400 ml Coconut milk
- 2 Clove of garlic
- 1 Onion
- 1 tsp Chopped ginger
- 3 Chilli red fresh
- 1 tbsp Rapeseed oil
- 1 tsp Garam masala
- 0,5 tsp Coriander powder
- 0,5 tsp Nutmeg
- Salt
- 1 Lime
Chop the onions, garlic and chilli and sauté with the ginger in hot oil in a saucepan. Peel and dice sweet potatoes. Add to the onions and sauté.
Deglaze with coconut milk and add the frozen spinach. Season with coriander, nutmeg and garam masala and let everything simmer for about 20 minutes with the lid closed.
Season to taste with salt and finally add the juice of the fresh lime.
