Ingredients
- 600 g Sweet potatoes
- 400 g Frozen spinach leaves
- 400 ml Coconut milk
- 2 Clove of garlic
- 1 Onion
- 1 tsp Chopped ginger
- 3 Chilli red fresh
- 1 tbsp Rapeseed oil
- 1 tsp Garam masala
- 0,5 tsp Coriander powder
- 0,5 tsp Nutmeg
- Salt
- 1 Lime
Instructions
- Chop the onions, garlic and chilli and sauté with the ginger in hot oil in a saucepan. Peel and dice sweet potatoes. Add to the onions and sauté.
- Deglaze with coconut milk and add the frozen spinach. Season with coriander, nutmeg and garam masala and let everything simmer for about 20 minutes with the lid closed.
- Season to taste with salt and finally add the juice of the fresh lime.
