Ingredients
 

  • 500 g Mixed minced meat
  • 1 Chopped onion
  • 140 g Tomato paste
  • 2 Garlic cloves
  • Parsley crispy fresh
  • Chives fresh
  • Basil leaves
  • 1 tbsp Dried oregano
  • 0,5 Dried chilli
  • Salt
  • Pepper from the grinder
  • Oil

  • Wash the meat, poke the garlic, chop the fresh herbs.

The Bolognese sauce

  • Fry the chopped onion, add the meat. Make sure to sear the meat, otherwise it will leave too much water.
  • Add the tomato paste and some water. I use concentrated puree or pulp so that the sauce doesn't become too runny.
  • Add the herbs. The garlic gives the best flavor when you mash it in a mortar with a little oil.
  • Simmer on a low flame and let the liquid reduce. If necessary, add a little water, depending on the desired consistency.
  • Salt and pepper

Serving suggestion

  • In addition to the classic pasta sauce, you can "wipe" the Bolognese with fresh white bread straight from the pan and enjoy.
  • Is particularly suitable as a filling for wraps, as the sauce is not too watery due to the reduction.
